This quinoa salad is packed full of nutrition and is such a satiating meal. Quinoa has all 9 essential amino acids making it a complete protein source. This meal can be batch cooked and can last up to three days in the fridge in an airtight container for lunch the next day.

Serves: 1 Nutritional Information Per Serving: Calories: 509 Carbohydrates: 38 g Protein: 14 g Fats: 32 g Ingredients: • A handful of feta cheese, crumbled. • A handful of sweet and salty nuts. • Juice of half a lemon or lime • 3 tsp olive oil • A handful of fresh herbs, such as basil, mint or parsley, chopped. • Pinch of salt. Method: 1. Place all the ingredients in a serving bowl and mix well.
