
Apple and Cinnamon Porridge Oats

Ingredients:
- 200g Traditional porridge oats or GF**
- 180ml low fat milk (or almond/oat/unsweetened) or Dairy free alternative**
- 270g Brambly Applesauce (gives a sharp bite and helps enhance the apple flavour)
- 2 Full eggs ** or one flax egg & one mashed banana for vegan**
- 50g Dark Brown sugar (or 50ml of maple syrup or honey)**
- 2 Tsp vanilla Extract
- 2 Tsp Cinnamon • ½ Tsp Baking powder or GF**
- 400g Chopped Apple (I used tinned for speed but brambly apples are perfect too!) **SEE NOTE
Method:
- Put all the dry ingredients into a bowl and blend.
- Whisk all the wet ingredients into a jug
- Lightly butter a casserole dish (mine is approx. 7x 11”)
- Blend the wet with the dry until completely mixed through.
- Pout into your buttered casserole dish and spread out the mixture.
- Cover with some Clingfilm and leave rest overnight in the fridge
- Pre-heat your oven the next morning to 180C
- Remove your dish from the fridge.
- Bake until golden on top for about 20-25minutes
- 10.Rest on a cooling rack for 5 minutes before serving
- Delicious with a dribble of maple syrup, scattered fruit and an extra dollop of Greek yoghurt!

**NOTE Can be made gluten free by changing to GF Oats and baking powder Can be made vegan by replacing sugar with 50ml maple syrup and / or daily free milk of choice, One Flax egg and one mashed banana instead of eggs (Make a Flax egg -1 tablespoon flaxseed mixed with three tablespoons of water) Change the apple to frozen mixed berry, or raspberries or blueberries. If using frozen fruit just make sure you gently mix the fruit at the last stage, or your porridge could turn violet. Can add 50g chopped nuts too.
