Baked Pears with Maple Vanilla

Serves: 4

Ingredients:

  • 4 tbsp chopped hazelnuts
  • 2 tbsp maple syrup (honey or agave also work well)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 4 ripe pears, peeled
  • 4 tbsp Greek yoghurt, to serve

Method:

 

 

  1. Preheat the oven to 180°C/350°F/gas 4.
  2. Mix the hazelnuts, maple syrup, cinnamon and vanilla in a medium bowl and set aside.
  3. Use a sharp knife to cut the pears in half length-ways. Hollow out the cores using a teaspoon.
  4. Slice a little off the rounded side of each pear half so that they sit flat.
  5. Arrange the pear halves, core side up, in an ovenproof dish.
  6. Carefully spoon the hazelnut mixture into the hollows of the pear halves.
  7. Bake for 15 minutes or until tender.
  8. Divide the pear halves between warmed serving plates.
  9. Finish with a dollop of Greek yoghurt and serve without delay.
