Beef and Lentil Bolognese

Serves: 4
 
Ingredients:
  • 1 tbsp rapeseed oil
  • 2 carrots sliced
  • 1 medium onion, diced
  • 2 sticks celery, diced
  • 250g lean beef mince
  • 2 cans canned whole peeled tomatoes, crushed
  • 1/2 cup dried red lentils
  • 1 tsp dried mixed herbs
  • 2 large handfuls of spinach
  • 1 tsp balsamic vinegar
  • 250mls stock
  • pinch ground pepper

Method:

  1. Gently saute the diced onion, carrot and celery until soft and lightly browned in a large pot
  2. Add mince and stir constantly to break up and brown evenly
  3. Add all other ingredients except the spinach
  4. Bring to the boil then reduce heat to a gentle simmer
  5. Simmer gently for approximately 1 hour.
  6. Lastly add the spinach cover and let it wilt into the mixture**You can use this as a dinner with baby potatoes, some brown basmati rice or a baked potato (white potato or sweet potato). Thank you Nutrition & Lifestyle coach Cathy for the Recipe
