
Chicken, Pasta & Pea Broth

Ingredients:
- 1 tbsp olive oil
- 2 skinless chicken fillet breasts, finely sliced
- 100g spelt pasta
- 500ml chicken stock
- 50g frozen peas
- a handful of chopped scallions
- a handful of basil leaves, chopped
Method:
- Heat the oil in a medium pan over a medium-high heat. Cook the chicken for 5 minutes or until cooked through. Drain the cooked chicken and set aside.
- Meanwhile, cook the pasta according to the instructions on the package, but using chicken stock instead of water. Do not drain the pasta. Leave the cooked pasta and chicken stock to simmer together in the pan. Add in the cooked chicken, frozen peas and scallions and bring to the boil. Cook for about 3 minutes, until the chicken and vegetables are piping hot.
- Divide between warmed serving bowls. Sprinkle over the basil leaves and serve without delay.
