Chicken Tagine

Prep Time: 20 min   Cook Time: 40 min   Serves: 3-4 portions Ingredients:

  • 3 tbsp olive oil 
  • 1 onion, finely chopped 
  • 1 cinnamon stick, broken in half 
  • 3 skinless chicken breast fillets, cubed 
  • ½ butternut squash, peeled, seeded and finely diced  
  • 1 red pepper, seeded and diced 
  • 10 dried apricots, chopped 
  • 2 tsp ground ginger 
  • 250g couscous 
  • 500ml chicken stock 
  • 1 tbsp honey  
  • a handful of flaked almonds  
  • a handful of mint leaves, chopped  

Method:

  1. Heat the olive oil in a large pan over a medium heat.
  2. Add the onion and cinnamon stick and cook for 3 minutes. Stir frequently and add a splash of water if the pan gets dry.
  3. Add the chicken and cook for 5 minutes.
  4. Add the butternut, pepper, apricots and ginger and cook for 3 minutes.
  5. Stir in the couscous, chicken stock and honey.
  6. Reduce the heat and simmer for 15–20 minutes, until the couscous is cooked and has absorbed the liquid.
  7. Spoon the chicken tagine into warmed serving bowls.
  8. Sprinkle over the almonds and mint and serve.
