Egg Fried Veggie Noodles

Ingredients:
  • 1tbsp sesame oil (or olive oil)
  • Mixed Vegetables ( e.g. onion, garlic, peppers, mushrooms & sugar snap peas)
  • 1 Egg
  • 2-3 tablespoons of cubed tofu, chickpeas or mixed beans.
  • Season with pepper ( other options: cayenne pepper & Chinese 5 spice)
  • Nest of Whole-wheat noodles (approx. 50g)
  • Soy Sauce (15 - 30mls depending on preference)
  • Handful of unsalted peanuts or cashews

Method:

  1. Heat 1 tbsp of sesame oil (or olive oil) in the pan – Sesame oil gives a lovely flavour if you have it.
  2. Add some mixed veg and lightly fry. Onion, garlic, mixed peppers, mushrooms and sugar snap peas for example. Try to use a variety of colours when it comes to choosing vegetables.
  3. Beat an egg in a cup and pour into the veg continuously stirring the veg so the egg cooks into broken up pieces. At this stage you can add in 2-3 tablespoons of cubed firm tofu, chick peas or mixed beans.
  4. Season with black pepper or cayenne pepper if you want it spicy. Chinese 5 spice is another nice option to try.
  5. In a separate pot bring water to the boil and then add a nest of whole-wheat noodles. Cook as per instructions until soft (usually 3-4 mins)
  6. Stir the noodles into the egg/veg mixture and add soy sauce for taste and moisture.
