Leftover Potato Salad

Serves: 4 - 6 
 
Ingredients:
• Leftover potatoes
• 1 bunch spring onions, sliced
• 1 bunch fresh dill, chopped 1 tbsp of dried dill.
• 200g peas (frozen are fine)
• 1 lemon, juiced
• 200g organic natural yoghurt
• Salt & pepper, to taste
 
Method: 
1. Roughly chop the potatoes and set aside. If using frozen peas, boil now & leave to cool.
2. In a small bowl mix the spring onions, dill, peas, lemon juice and yoghurt together.
3. Add the chopped potatoes to the dressing and mix well.
4. Serve immediately or leave in the fridge in an airtight container
