Mango Salsa

Prep Time: 5 minutes

Serves: One big bowl  

Ingredients:

  • 1 mango, peeled and diced
  • ½ cucumber, peeled and diced
  • a handful of mint leaves, chopped
  • juice of ½ lime
  • 1 tsp apple cider vinegar

Method:  

  1. Place all of the ingredients in a medium bowl.
  2. Toss well to combine.
  3. Transfer the salsa to a serving bowl.
