
Maple Granola
Feb 04, 2025Shop-bought granolas can be packed with sugar so it’s often a healthier, tastier and cheaper option to make your own. I aim to make a batch of this once a week, normally on a Sunday.
The baked apple mixed with the energy-rich oats and protein packed nuts will keep you going all morning. I’ve also added cinnamon to help stabilize blood sugar levels and to add extra flavor.
I love it served with some good quality natural yoghurt, banana and mixed berries
Prep time: 5 minutes
Cook time: 30 minutes
Makes: 7 big portions
Ingredients:
- 100g jumbo porridge oats
- 50g flaked almonds
- 50g hazelnuts, broken up
- 50g pumpkin seeds
- 50g sunflower seeds
- 50g walnuts
- 6tbs coconut oil, melted
- 3tbs maple syrup
- 3tsp ground cinnamon
- Pinch of salt
- 2 green eating apples, peeled, cored and sliced into thin rings
Method:
- Preheat oven to 180C/Gas mark 4
- In a large bowl mix together the dry ingredients. Add the coconut oil and maple syrup and stir well until combined.
- Tip the mixture into an ovenproof dish
- On a separate tray lined with parchment paper lay out your apple rings.
- Place both in the oven and bake for 30 mins making sure to stir the granola and turn the apple rings halfway through.
- Remove from oven and allow to cool.
- Once cooled mix the apple pieces through the granola.
- Store in an airtight container somewhere cool.
