Maple Granola

Shop-bought granolas can be packed with sugar so it’s often a healthier, tastier and cheaper option to make your own. I aim to make a batch of this once a week, normally on a Sunday.

The baked apple mixed with the energy-rich oats and protein packed nuts will keep you going all morning. I’ve also added cinnamon to help stabilize blood sugar levels and to add extra flavor.


I love it served with some good quality natural yoghurt, banana and mixed berries

Prep time: 5 minutes
Cook time: 30 minutes
Makes: 7 big portions

Ingredients:

  • 100g jumbo porridge oats
  • 50g flaked almonds
  • 50g hazelnuts, broken up
  • 50g pumpkin seeds
  • 50g sunflower seeds
  • 50g walnuts
  • 6tbs coconut oil, melted
  • 3tbs maple syrup
  • 3tsp ground cinnamon
  • Pinch of salt
  • 2 green eating apples, peeled, cored and sliced into thin rings

Method:

  1. Preheat oven to 180C/Gas mark 4
  2. In a large bowl mix together the dry ingredients. Add the coconut oil and maple syrup and stir well until combined.
  3. Tip the mixture into an ovenproof dish
  4. On a separate tray lined with parchment paper lay out your apple rings.
  5. Place both in the oven and bake for 30 mins making sure to stir the granola and turn the apple rings halfway through.
  6. Remove from oven and allow to cool.
  7. Once cooled mix the apple pieces through the granola.
  8. Store in an airtight container somewhere cool.
