Potato Wedges

Ingredients:

  • 4 medium potatoes, scrubbed (not peeled) and cut into wedges
  • 2 tbsp. olive oil
  • 30g coarse salt, Himalayan pink salt or sea salt is ideal.
  • 30g fresh rosemary, finely chopped

Method:

  1. Preheat the oven to 200°C/400°F/gas 6. You will need two large baking trays.
  2. Place the potato wedges and oil in a large mixing bowl. Use your hands to give each potato wedge a coating of oil and herbs. Spread the potato wedges on the baking trays. Roast for about 20 minutes, turning once,until cooked through and crispy on the outside.
  3. In a small bowl mix together the rosemary and salt. Divide the potato wedges between serving bowls and season to taste with the rosemary salt.
