
Potato and Tuna

Ingredients:
- 1 baking potato
- olive oil
- salt and pepper
- 112g tin of tuna in olive oil, drained
- 1 scallion, finely sliced
- 1 tbsp natural yoghurt
- 25g Cheddar, grated
Method:
- Rub the potato with a little olive oil and sprinkle over some salt.
- Prick the potato all over with a fork. Place the potato in a microwave-proof dish. Cook at full power for 5 minutes. Turn over the potato and cook for 3–5 minutes more, until soft.
- Meanwhile, mix the tuna, scallion and yoghurt in a large bowl.
- Season to taste and set aside.
- Split the baked potato in half lengthways and fill with the tuna mixture.
- Sprinkle over the Cheddar and serve with side salad
