Rice Crispie Protein Treats

This recipe is great to make with the kids as its made in minutes. Delicious after a hockey match when the kids are hangry or before you tackle your ironing basket!

Ingredients:

  • 100g Rice Krispies (Can be GF)
  • 15g Protein powder (I used Vegan Awesome protein powder caramel/optional)
  • 120g Meridian Smooth Peanut butter (See note**)
  • 100g Maple Syrup (See note **)
  • 65g melted Coconut oil (See Note** )
  • 80g 55% Dark melted chocolate for topping

  Method:

  1. Weigh out all your ingredients.
  2. In a large bowl add your Krispies and protein powder (if using)
  3. In another bowl add your peanut butter, maple syrup, melted coconut oil and whisk to combine.
  4. Sprinkle in your Rice Crispies and stir to blend.
  5. Transfer into an 8x8 lined tin for a thin layer or 7” tin for a higher treat. This will also affect the number of slices you get depending on the size of tin you use.
  6. Compress mixture into the tin, this helps glue the bars together and then chill for 30minutes before coating in melted chocolate.

NOTE **Virgin, or unrefined coconut oil has a slight coconut flavour that adds a subtle sweetness to these bars and helps the filling stay together. You can also sub melted butter or vegan butter **Instead of maple syrup feel free to use honey, brown rice syrup or coconut syrup. **Feel free to use almond or cashew butter.
