Spicy Turkey Wraps

This is a recipe I turn to when I need to get away from starchy foods. Using Little Gem lettuce leaves as wraps is a great way to make a light and refreshing lunch

Serves: 2
Ingredients:

  • 2 red peppers, deseeded and finely sliced
  • 1 small carrot,grated
  • ⅓cucumber, deseeded and diced
  • 2 tbsp raw cashews, chopped
  • a handful of coriander leaves
  • 250g turkey mince
  • 4 scallions,finely sliced
  • 2 garlic cloves, crushed
  • 1 small red chilli, deseeded and finely sliced
  • a thumb-sized piece of ginger, grated salt
  • 1tbsp coconut oil
  • 2 heads of Little Gem lettuce, leaves separated, to serve

For the dressing:

  • 2 tbsp soy sauce
  • 1 tsp agave syrup/honey/maple syrup
  • ½  tsp Tabasco sauce(or ½chilli, deseeded and finely chopped)
  • juice of 1 lime

Method:

  1. Toss the peppers, carrot, cucumber,cashews and coriander in a large bowl and set aside.
  2. Combine the turkey mince, scallions, garlic, chilli, ginger and a pinch of salt in a large bowl. Heat the coconut oil in a large pan over medium-high heat and cook the turkey mixture for about 10 minutes,until golden and crumbly.
  3. Meanwhile, place all of the ingredients for the dressing in a jar with a lid and shake to combine.
  4. Add the cooked turkey to the salad mix. Drizzle the dressing on top and toss well to combine.
  5. Fill the lettuce leaves with spoonfuls of the turkey mix and serve immediately
