
Spicy Turkey Wraps
Feb 04, 2025This is a recipe I turn to when I need to get away from starchy foods. Using Little Gem lettuce leaves as wraps is a great way to make a light and refreshing lunch
Serves: 2
Ingredients:
- 2 red peppers, deseeded and finely sliced
- 1 small carrot,grated
- ⅓cucumber, deseeded and diced
- 2 tbsp raw cashews, chopped
- a handful of coriander leaves
- 250g turkey mince
- 4 scallions,finely sliced
- 2 garlic cloves, crushed
- 1 small red chilli, deseeded and finely sliced
- a thumb-sized piece of ginger, grated salt
- 1tbsp coconut oil
- 2 heads of Little Gem lettuce, leaves separated, to serve
For the dressing:
- 2 tbsp soy sauce
- 1 tsp agave syrup/honey/maple syrup
- ½ tsp Tabasco sauce(or ½chilli, deseeded and finely chopped)
- juice of 1 lime
Method:
- Toss the peppers, carrot, cucumber,cashews and coriander in a large bowl and set aside.
- Combine the turkey mince, scallions, garlic, chilli, ginger and a pinch of salt in a large bowl. Heat the coconut oil in a large pan over medium-high heat and cook the turkey mixture for about 10 minutes,until golden and crumbly.
- Meanwhile, place all of the ingredients for the dressing in a jar with a lid and shake to combine.
- Add the cooked turkey to the salad mix. Drizzle the dressing on top and toss well to combine.
- Fill the lettuce leaves with spoonfuls of the turkey mix and serve immediately
