
Stir-fried Vegetables
Feb 04, 2025Prep Time 5 minutes Cook Time: 7 minutes Serves: 2 Ingredients:
- 1 carrot, peeled and finely slices
- A handful of baby corn, sliced lengthways
- A handful of broccoli florets
- A handful of sugar snap peas
- A handful of shredded white cabbage
- 1 Tbsp coconut oil or sesame oil
- 2 Tbsp soy sauce
Method:
- Heat the oil in a large wok over a medium- high heat.
- Add the vegetables and stir fry for about 5 minutes, add a splash of water if your wok becomes dry.
- Add the soy sauce and stir fry for 2 minutes or until the vegetables are cooked.
- I like to sprinkle some sesame seeds over my stir fried vegetables for an extra bit if crunch. Alternate option: add some garlic, ginger or chilli if you prefer to soy sauce.
