Ingredients:

  • 2 chillis, seeds removed and thinly sliced
  • 1 small red onion, finely diced
  • 6 cloves garlic, finely diced
  • 1 thumb-sized piece of ginger, grated
  • 50g fresh coriander, finely chopped
  • 75g stevia
  • 75ml white wine vinegar
  • 100ml water

Method:

  1. Place all ingredients in a pot and bring to the boil.
  2. Reduce heat and simmer for about 45 minutes. Check the taste and adjust seasoning to your taste, if it’s too spicy/sour add more stevia and /or a pinch of salt.
