Sweet Potato Wedges

Sweet potatoes seasoned with sea salt offers a perfect sweet & salty combination. Sweet potato is extremely high in the essential micronutrient Vitamin A and it is moderately high in Vitamin B6, Vitamin K and Vitamin C.

Ingredients:
• 1 large, sweet potato scrubbed (not peeled) and cut into wedges.
• 2 tbsp olive oil
• 4 tbsp chopped herbs or 2 tsp dried herbs (oregano, basil, tarragon and sage work well)
• salt and pepper

Method:
1. Preheat the oven to 200°C/400°F/gas 6. You will need two large baking trays.
2. Place the potato wedges, oil and herbs in a large mixing bowl. Use your hands to give each sweet potato wedge a coating of oil and herbs.
3. Spread the sweet potato wedges on the baking trays and roast for about 40 minutes, turning once.
4. Divide the sweet potato wedges between serving bowls and season to taste.
