
Avo & Eggs

- 2 slices of good quality wholemeal bread
- ½ avocado
- 2 eggs
- Chopped baby tomatoes
- Two slices of toast topped with ½ a mashed avocado, two eggs boiled or poached plus chopped up baby tomatoes
Method:
- Pop your toast in the toaster and meanwhile mash your avocado.
- Boil or poach 2 eggs.
- Spread your avocado mash over your toast and top with the 2 eggs and chopped baby tomatoes.
